๐Ÿ” INSTANT POT CREAMY SALSA CHICKEN PREP
โ–ช๏ธ @perdue Chicken Breast – 12oz
โ–ช๏ธ @simpletruthorganic Medium Salsa – ยฝ jar / 1c
โ–ช๏ธ Homemade Dry Ranch Seasoning – 3tbsp
โ–ช๏ธ @happyfarms Neufchรขtel Cheese – 3oz

Instant Pot – 6Q
๐Ÿ”น Mix seasoning with Salsa
๐Ÿ”น Pour Salsa in the bottom of the pot and add chicken breast on top (to avoid burn notice)
๐Ÿ”น Set for 10min High pressure (add 3min if frozen) + Natural Release (about 10min)
๐Ÿ”น When finished, open lid, add Neufchatel Cheese (or fat free cream cheese if you want), set lid on top and allow to sit for 10min to warm the cheese
๐Ÿ”น Remove chicken, shred and recombine with the salsa/cheese


๐Ÿ… BASIC PICO DE GALLO
Great on fish or chicken, in tacos or fajitas, omelets, baked egg bites – anywhere you want a chunkier “sorta salsa”
๐Ÿ… Tomatoes – ripe (but still firm) works best
๐Ÿ’ฎ Onions – I like Red Onion but anything from Spring Onions to Shallots will work
๐ŸŒถ๏ธ Peppers – Bell, Poblano, Anaheim, Jalapeรฑo, Shishito
๐Ÿฅ’ Cucumber – totally optional
๐Ÿ‹ Lemon or Lime Juice to taste
๐ŸŒฟ Cilantro, Dill or Parsley to taste
๐Ÿง‚ Seasoning of your choice to taste

WANT SOMETHING DIFFERENT?
๐Ÿฅญ MANGO – add fresh, ripe mango for a sweet salsa
๐ŸŠ CITRUS – add orange, grapefruit or mandarins for a little bite
๐Ÿ‰ WATERMELON – add melon for a great summer salsa

๐Ÿฅ‘ AVOCADO – add avocado for Guac meets Salsa
