BASIC INSTANT POT MARINARA

Tomatoes – ripe (but still firm) works best

Onions – I like Red Onion but anything from Spring Onions to Shallots will work
๐ถ๏ธ Peppers – Bell, Poblano, Anaheim, Jalapeรฑo or Shishito (*optional)
๐ Mushroom (*optional)
๐ฅ Carrots/Celery (*optional)
๐ง Garlic
๐ฟ Rosemary, Thyme, Oregano, Basil to taste
๐ง Seasoning of your choice to taste – I like Minced Onion, Parsley Flakes, Smoked Chili Sea Salt, Nutritional Yeast, Soy Sauce, Italian Seasoning
๐ช Roughly chop vegetables. Add everything to the pot and set for 25min on Pressure/Manual. Natural Release for 15min. No liquid added/needed as the tomatoes release plenty of their own.
๐นIf you want a thicker sauce, add a can of tomato paste.
๐นIf you want a smoother sauce, blend with an immersion blender or in a food processor.

MEAL HIGHLIGHTS
๐ High Point Meals – Since I generally only eat two meals/day, and don’t generally snack, I eat a little differently than most people on this plan. Points may be higher than you are used to seeing. I do not use sugar free, fat free, artificially sweetened or highly processed foods as a general rule (FF yogurt is an exception) as they flare up my autoimmune issues.
My goal is not to have as low point meals as possible…I am developing a sustainable, lifelong way of eating and changing my relationship with food forever… I eat everything on WW ๐ PURPLE… #eattherainbow
๐ฉ๐ปโ๐ณ As part of my Autoimmune issues, my sense of taste has changed greatly… I need stronger seasonings to taste them – so like with any recipe – develop your own tastes… Omit things, substitute things, add flavors – fear not the #experimentsineating – you never know when you’ll find something incredible!
