Cooked in @cooksessential 3Q Mini Pressure Cooker w Nonstick Liner
~ Rinse Rice
1:1 ratio – 1 cup rice + 1 cup liquid.
I like to use stock but you can just use water.
MULTIGRAIN Preset or
22min – High Pressure + Natural Release
If you want a softer texture – increase water by โ

I haven’t worn my FitBit since October. My movement has been extremely limited with many days I’m sure would have been under 1000 steps… It has been a long and difficult last 6 months – completely not COVID related.
I have had so much trouble with autoimmune inflammation and neuropathy… My feet and hands are either completely numb or on fire ๐ฅ or spasming… It hurts to stand, to walk and I have been having breathing and BP issues… It’s been rough…
But yesterday I started on a micro goal.
Yes, micro… Not mini, not major, not Milestone… Just a micro…
Walk to my mailbox ๐ฌ and back once a day. It may sound stupid and it isn’t all that far but it is on an incline and by the time I get back, I am generally winded, my heart rate is between 120-150, my feet feel like I have been walking on broken glass and if it’s hot/muggy out, I generally have breathing issues.
Why do I say all this?
Because despite all this – I WILL walk to my mailbox everyday. My step ๐ฉด๐ฉด goal is 2500. Tiny for most people but for me, that is more than double what I have done on some days…
I need definable – โ
– 2500 steps / mailbox
I need achievable – โ
– it is possible on all but the worst days
I need accountable – โ
– YouTube/Insta/FB
I need sustainable – โ
– realistic expectations that push me but are not so much that I can’t continue to make progress.
Today I finished my day walking little laps in my gravel drive loop while burning boxes (I live rurally and we take our trash to the landfill and many people have burn barrels for cardboard etc)…
I don’t think I’ve seen 4000 steps in a very very long time.
