Cooking for Sandy
I cook 3-4 days a week for an older neighbor who had a stroke last year. She is such a lovely lady.Β She lost a lot of her mobility, especially on one side and this is just one way I can help make her life easier.Β
I was talking to her daughter recently and I am thrilled to report that since I have started helping – her glucose levels have stabilized and her diabetes is well under control.Β Actually her late night numbers have been a bit low, so yesterday I baked her a loaf of banana bread so she can have a small slice around 7pm to see if we can balance the drop a little bit.Β
I love that I have someone to cook for and that I can be of service… β€οΈβ€οΈβ€οΈ

Today I made:
Mackerel Cakes w Tzatziki
Garlic/Ginger Steamed Asparagus and Grape Tomatoes

I took her some Honey Poppyseed Dressing with I since I didn’t get a chance to make this week’s dressings yet…
She finished it all and said she really enjoyed it… I love that!
I also made my first loaf of Banana Bread. For all the cooking I do, I don’t bake a lot but I had some overripe bananas that needed to be used so I broke out the bread machine and gave it a go.

I had good intentions today… I really did. But between cooking for Sandy and spending time with her (which I really enjoy) and just not feeling very hungry… I didn’t cook until after 9pm and only had the one meal… Well part of the one meal…




I ate the mackerel cake, delicata squash and ube (purple yam) but in listening to my body, I stopped there. I saved the rest for tomorrow.

βͺοΈ Prep salad toppings for ease of putting together a Superfood Salad + protein for dinner 5 nights / week
βͺοΈ Continue to weigh daily to track inflammation and record on #fearlessfridays
βͺοΈ Check, check and double check all food labels before using any packaged products including raw meats and frozen vegetables
