PART 1
Cooking for Sandy
I cook 3-4 days a week for an older neighbor who had a stroke last year. She is such a lovely lady.  She lost a lot of her mobility, especially on one side and this is just one way I can help make her life easier. 

I was talking to her daughter recently and I am thrilled to report that since I have started helping – her glucose levels have stabilized and her diabetes is well under control.  Actually her late night numbers have been a bit low, so yesterday I baked her a loaf of banana bread so she can have a small slice around 7pm to see if we can balance the drop a little bit. 

I love that I have someone to cook for and that I can be of service… ❤️❤️❤️

Today I made:
Mackerel Cakes w Tzatziki
Garlic/Ginger Steamed Asparagus and Grape Tomatoes

SUPERFOOD SALAD
She, like me, loves fruit in her salads 😋
Power Greens
Raspberries
Blueberries
Green Grapes
Watermelon Radish
Celery
Carrot
Spring Onions
Sunflower Seeds
Pepitas (Pumpkin Seeds)
Cranberries

Dried Shrimp

I took her some Honey Poppyseed Dressing with I since I didn’t get a chance to make this week’s dressings yet…

She finished it all and said she really enjoyed it… I love that!

I also made my first loaf of Banana Bread. For all the cooking I do, I don’t bake a lot but I had some overripe bananas that needed to be used so I broke out the bread machine and gave it a go.

🍲 BRUNCH

🥗 DINNER

I had good intentions today… I really did. But between cooking for Sandy and spending time with her (which I really enjoy) and just not feeling very hungry… I didn’t cook until after 9pm and only had the one meal… Well part of the one meal…

I ate the mackerel cake, delicata squash and ube (purple yam) but in listening to my body, I stopped there. I saved the rest for tomorrow.

MACKEREL CAKES
Canned Mackerel in Brine
Panko Breadcrumbs
Egg
Spring Onion
Spicy Brown Mustard
Lemon Juice

Cooked in Air Fryer Oven
Preheated – Middle Rack
400° for 12min


Squash / Ube / Asparagus
Steamed in Goodcooks Microwave Steamer
Ube – 10min
Squash – 8min
Asparagus – 3min

INTUITIVE EATING CHALLENGE BASIC GUIDELINES
▪️ No tracking, weighing, measuring foods
▪️ Eat when actually hungry (no eating just to meet caloric target)

EXTRA GUIDELINES
▪️ Eat as I normally would (whole food focus) allowing for additional things I may not usually pay the points for out of principle 😁

▪️ Make first meal of the day the largest (in case I don’t feel like eating in the evening)

▪️ Prep salad toppings for ease of putting together a Superfood Salad + protein for dinner 5 nights / week

▪️ Continue to weigh daily to track inflammation and record on #fearlessfridays

▪️ Check, check and double check all food labels before using any packaged products including raw meats and frozen vegetables
