In keeping with my plan of having my biggest meal earlier in the day – I finished last night’s leftovers and added a Shrimp Alfredo for brunch.

Purple Cabbage
Heart of Palm
Rainbow Carrots
Watermelon Radish
Mini Cucumber
Roasted Corn Nuts
Roasted Wasabi Edamame
Feta
Dried Shrimp

LEMON PEPPER SHRIMP ALFREDO
Xlrg Shrimp
Banza Chickpea Linguine
Prego Classic Alfredo
Lemon Juice
Lemon Pepper Seasoning

London Broil Steak w Steak Sauce
Yogurt Pesto Potatoes
Spaghetti Squash
Green Peas

STEAK & POTATOES
Cooked in Air Fryer Oven
Preheated – Middle Rack
400ยฐ for 10min (medium rare)

(Potatoes precooked in microwave for 3min)

SPAGHETTI SQUASH
Steamed in MICROWAVE – 6min
This was a very small squash – larger squash will take longer (I usually do them in the Instant Pot if they are the more standard 2lb size)
