Preheated – Middle Rack – Silicone Baking Tray
375° for 15min
Cooked in 3.5Q Cooks Essential Pressure Cooker
½cup Rice + 1cup liquid (water or stock)
18min High Pressure + Natural Release
Put other breast to marinate for dinner.

I found with the Carrot Ginger dressing, for me personally, I wanted it thinner so I added additional water and some lemon juice until I got the consistency I wanted…
Change of plans – a storm has come through and got me hurting. I will do the chicken tomorrow. For tonight all I could manage was a super quick, no frills meal.
It’s Skinny Pasta – Konjac Pasta
I really like this as far as pasta substitutes go. It is not gummy or weird smelling, you don’t need to rinse it heavily and it has a much firmer texture, almost like a Ramen Noodle as opposed to a super delicate, fall apart noodle.
The closest I can relate it to is the Palmini Heart of Palm noodles I like, but less expensive. They also do one as a rice replacement… I eat standard rice but if you wanted something other than cauliflower rice, because, ewwwww… This could work well for that. I am going to look for it in the Asian supermarket as well, as several of the Korean food bloggers I follow on YouTube use Konjac Rice regularly so maybe I can find a good price on it there.
