I tinkered throughout the day with a couple of preps:
💮 PICKLED ONIONS
(to replace my spilled jar 😁)
I make them a bit different each time depending on what I have on hand but here is a good general recipe.

This time I used:
2c White Vinegar (use ACV or Rice Vinegar if you want a milder taste)
¾c water
⅓c Light Brown Sugar (or use white sugar, alternative sweeteners, honey, maple syrup)
1tbsp Himalayan Pink Salt
Rainbow Peppercorns
🐟 I also made a new batch of Dashi Broth
(Japanese Fish Soup Stock)



🍒 Pitted Cherries and deseeded a big beautiful Pomegranate for this week’s fruit salad

🥚 I’m going to try making PICKLED EGGS!
I saved the pickled beet juice and some extra pickling liquid from the onions and am going to give this a try.
I cooked the eggs in the Instant Pot

Coat chicken breast in mustard, cover in panko, let sit 5min while air fryer preheats, spray with cooking spray and cook.

CROCKPOT
Put frozen (oops) pork, mushroom soup, 2 halved king mushrooms and ⅓c water into crockpot. Sprinkled ½pkt onion soup mix on top. Set to High for 2hrs. Checked on and stirred, added red onions, turned to Low for 2hrs. Added Greek Yogurt and green onions to serve. Very, very, VERY tasty! 😂

Depending on how soft you like your rice – liquid ration will vary from 1:1 for a firm rice and 1:1½ for a softer rice.
White Rice – 5min / 8min for a softer rice
Jasmine / White Basmati Rice – 18min
Brown Rice – Short Grain – 22min

INTUITIVE EATING CHALLENGE BASIC GUIDELINES
▪️ No tracking, weighing, measuring foods
▪️ Eat when actually hungry (no eating just to meet caloric target)
▪️ Eat as I normally would (whole food focus) allowing for additional things I may not usually pay the points for out of principle 😁
▪️ Make first meal of the day the largest (in case I don’t feel like eating in the evening)
▪️ Prep salad toppings for ease of putting together a Superfood Salad + protein for dinner 5 nights / week
▪️ Continue to weigh daily to track inflammation and record on #fearlessfridays
▪️ Check, check and double check all food labels before using any packaged products including raw meats and frozen vegetables
