I made the whole kit and took ½ down to my neighbor Sandy who I cook for 3 days a week. It wasn’t a normal cooking for her day but I thought she might like it.

Nutritional amounts below are for my part. They provided full nutritional information on their website and because I needed to increase my healthy fats and calories to meet my targets today – I added ½tbsp Grapeseed Oil to the carrots and chicken when cooking.

Cooked in @cooksessential 3Q Mini Pressure Cooker w Nonstick Liner
~ Rinse Farro
1:2 ratio – 1 cup quinoa + 2 cup liquid.
I like to use a stock but you can just use water.
7min – High Pressure + Natural Release

Needed to keep it simple for dinner. Steamed and mashed the purple sweet potato (mixed with yogurt) – steamed the squash rings and zucchini roses in the microwave and added butter. Heated up the roast beef and DONE!

Meat in a can is always a bit questionable but this Clover Valley (Dollar General) Roast Beef is actually really tasty. The meat pieces are actual pieces – not ground up, indistinguishable bits and the gravy is good. Like any processed food like that, the sodium is high, but on a day where I am just hurting too much to do much more – this works for me.
