👩🏻‍🍳 COOKING FOR SANDY DAY
3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much 😁 Today is one of her days. I’m enjoying having someone to cook for again.

For the month of July, she has a friend staying and I am cooking for them both. 😊

CORE NOTES:
▪️ I make my own Bone/Herb stocks here in the Instant Pot but you could use any chicken or veggie stock – canned, carton or homemade, for 0️⃣.
▪️ I grind my own meats at home to be sure they are preservative free since I was having trouble with that. I used 6oz of trimmed Pork Loin which is 0 on Core, ground and seasoned ( with AC Leggs Pork Sausage Seasoning Blend #10) for the meatballs. You can use chicken, turkey, beef or pork here – as long as it meets the lean meat guidelines. Preprepared meatballs containing added sugars, oils, starches or non-Core ingredients would have to be pointed.
▪️ The only points here are for the full fat ½ & ½ I used (4WP over 4 servings = 1WP/serve). If you use a fat free version (as in the PoundDropper recipe) – it is 0️⃣ per serving for up to 2 servings and 1WP after that. (1WP total over 4 servings = 0 until 3 servings)

I was not feeling very well today – everything hurts, my chest has been tight, shortness of breath, fatigued more than normal… I knew something was up so I started testing things. Glucose is normal so it isn’t a blood sugar issue but this explains it all…

This is just standing in my kitchen doing nothing. I have trouble with my BP sometimes as a side issue of my other medical issues… Today is obviously one of those days… Ugh…
