Last month I made a Beef Stew I really enjoyed – the horseradish and wine made all the difference.

As I was looking for similar recipes to make this month, I found several that I really liked and created a Mashup recipe of all three… π€£ Any of them could be delicious on their own!

Red Wine
Tomato Paste
Garlic Powder / Onion Powder / Rosemary / Dried Chives / Salt / Pepper
Fresh Sage / Bay Leaves

Super easy – cut all veggies and the roast to the size you want. Many recipes call for you to sear the meat and precook the onion, carrot, garlic etc but I don’t. To me it doesn’t taste any different in the end.
I just put everything in the pot…

Gave it a good mix…

Set it for 25min + Natural Release and walked away…

When it was finished I added a cornstarch slurry to thicken it up, let it cool and divided into 8 servings – 6 for me and 2 for Sandy!

You can easily do this in other ways:

I am freezing it as is. I like to add a few tablespoons of yogurt or sour cream when serving and top with some fresh green onion.
