I had a rough day today with the weather and spent most of it resting/recovering. I didn’t eat until really late so I only had these two meals.

π₯ PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.
Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.
If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.
Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.
Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.

I tried an experiment with my Chef IQ Smart Cooker – I know lots of people use their Instant Pot for cooking hard-boiled eggs but I hadn’t found much success in doing it with soft-boiled.
Here is a great reference chart by egg weights.

I’ve tried egg cookers and various devices and gadgets but in the end I kept going back to the stovetop. My Smart Cooker has slightly different settings that it recommends – the first being using low pressure for soft-boiled but it actually recommends a Steam setting as well. I’m going to try the steam setting next time but this time I just went with the settings in the Smart Cooker itself.


Now keep in mind that I’m using duck eggs and they have a harder shell and are larger than what the settings were originally designed for so I was a bit skeptical.
No need!
They came out brilliantly.
I’m going to try a couple of adjustments to the pressure settings and try the steam function but I think this will definitely be how I do my soft boiled eggs going forward.
