Trying to replicate a noodle kit I love from Weee! that just has too many ingredients I am staying away from. This was close – and good – but I needed a pickled element to cut the richness of the peanut sesame.

I adore pickled bamboo shoots – so I tracked down a recipe. I am going to try this with the rest of the can of shoots and sprouts I have open.

There is no vinegar in this recipe which I saw in many of the others so I’m going to add rice vinegar as well.

I tried the Steam setting on my Smart Cooker for the egg and I assumed since it was a duck egg (larger /thicker shell) that if I used Medium Boiled – I would maybe get a actual soft boiled… Nope it was a beautiful medium… So I’ll try the soft boiled Steam setting for the next one.

๐Ÿ’‰ If you aren’t familiar with my situation, basically I live with several autoimmune issues… an “inflammatory overstimulation response” brought on by my basic blood cells thinking they are Spartan Warriors and attacking everything in sight.
