๐ŸŒ€ INSTANT POT BROCCOLI CHEESE SOUP

๐ŸงŠ FREEZER MEAL PREP ๐ŸงŠ – 8 servings

This, as per my usual, is a bit of a mashup of ideas I found in various recipes… Some recipes may only mention 1 additional ingredient (like mustard or wine) and I’m like – heck yeah – let’s add that. ๐Ÿ˜‚

I used:
โ–ช๏ธHomemade Chicken Bouillon
โ–ช๏ธWhite Wine (or Light Beer – completely optional)
โ–ช๏ธCelery – many recipes add Carrot/Onion as well
โ–ช๏ธBroccoli – great way to use up extras
โ–ช๏ธPotato – any kind – I like Yukon Gold for soups or I even saw people using frozen hashbrown potato – you could replace this with cauliflower or even turnip if you are wanting a lighter option
โ–ช๏ธGarlic – fresh, minced, dried powder – all okay
โ–ช๏ธDijon Mustard – can use any type or just omit
โ–ช๏ธSalt/Pepper

โ–ช๏ธMilk – I used 2% but you can use any % – dairy alternative milks should work just as well – you could also use half n half or heavy cream here
โ–ช๏ธCornstarch (optional if needed to thicken)
โ–ช๏ธPepper Jack Cheese + Sharp Cheddar Cheese NOTE: Use any cheese you like. This is what I had on hand. I prefer the block cheeses as the shredded is usually treated with an anti caking agent and doesn’t melt the same. Use full fat, fat free, any flavor you like though the sharper cheeses work better than say a Mozzarella. A rotary grater is a lifesaver here.

Chop veggies and put everything except milk, cornstarch, cheese in the pot. You don’t have to peel the potatoes unless you want to.

High Pressure 5min + Natural Release

Once release is finished, add milk (+ cornstarch if using – I almost always do in soups I want to be thick – just mix it right in the milk) – then use an immersion/stick blender to puree as you want. Add the cheese, rest the lid on it for about 5 minutes for it to get all melty – then just stir and serve!

โ“ Want it chunky ?
Only blend ยฝ and then recombine
โ“ Want it super smooth?
Blend longer until it is as smooth as you like
โ“ Don’t have a stick blender?
Use a normal blender but you need to let it cool considerably then reheat to add the cheese
