This just feels like a soup day – I have tons of fresh Kale and Gold Potatoes so Zuppa Toscana it is!
There are so many adaptations you can do with this to get it as “skinnified” as you want:
MEAT: Use turkey sausage or turkey crumbles if you want – or use 99% lean ground turkey or chicken breast for the lowest calories but be sure to extra season as it doesn’t have a lot of flavor on its own.
DAIRY: I’ve seen heavy cream, half n half, evaporated milk, 2% milk and unsweetened almond milk used in various recipes
POTATO: If you want to replace the potatoes, I’ve seen cauliflower, turnip, radish and parsnip swaps
