It has been an odd last few days so here is a combined post.
SATURDAY 👩🏻🍳 COOKING FOR SANDY DAY 3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much 😁 Today is one of her days. I’m enjoying having someone to cook for again.
Today friends came to help with some things around here I was having trouble with and I cooked for them as well – they requested Steak Fajitas (with very finely chopped veggies as opposed to traditional strips) – I cooked extra bund took some for Sandy. I also made a pot of Mexi Rice…
By the time we finished here and I cooked for Sandy, took her her meal and needed to go into town to pick up some prescriptions – I hadn’t eaten and it was getting late. I did a quick shop at Kroger for a few things on sale and decided to order a Pork Carnita plate from Tampico Grill. I got home about 9pm. I had half the plate and put the rest away.
Went to bed early… No dinner… Feeling a bit rough.

After my doctor’s appointment yesterday, talking to Sara last night and going over 8 online calorie calculators, I have made a few changes to my daily targets. I still need to observe histamines and oxalates but my calorie target is now 1746/day or 12,222/week.
A weekly target means that if I have a high pain day and only have 800 calories, I can make that up before the end of the week. These numerics start from today.
One of the ways that I am going to accomplish this is to make sure that my midday meal is the most calorie-dense so that will often be between 700 and 1000 calories. I know some of you are choosing to do 1200 calories/day and this will freak you out but this is where I am at right now.

🥚 PERFECT SOFT BOILED EGGS 🥚 In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.
Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.
Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.
Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.
I cook them whole but remove the whites for histamine issues… The dogs love egg days!
🍚 INSTANT POT BLACK RICE Cooked in @mychefiq 6Q Smart Cooker ~ Rinse Rice well 1:1 ratio – 1 cup rice + 1 cup liquid. I like to use stock but you can just use water. 25min – High Pressure + Pulse Release NORMAL INSTANT POT (Natural Release) If you want a softer texture – increase water by ⅓-½c and increase time to 28min

NO STICKY HANDS PREPARATION Combine all ingredients in a bowl with a fork or small spatula. Lightly spray your baking sheet or lay down some parchment paper and turn your dough out onto the tray. Using the fork/spatula, shape the dough to the thickness and diameter you want. Top with an egg wash and additional seasoning if you’d like. Bake and enjoy!

Since my Dr appt isn’t until Mon now (see yesterday for the confusion), I’m going to focus on a fridge /freezer clean out using lots of the fruit and vegetables that I currently have so that when I shop on Monday I can do an organized restock.
One of the other things I wanted to do is put together a bit of a meal idea list for next week. As I’m going through the fridge and freezer, I’ll look at what I need to have used up and what I need to buy in order to try a couple of new recipes. I asked Sandy about it and she said to just surprise her and bring her a little bit of everything this week… 🤣
One of the things I have been meaning to try is the Big Mac Salad and I’ve been craving something Reuben-ish. They have very similar sauces (1000 Island type based) so I’m going to cheat a bit and just make one for both dishes.
I need to make a sweet relish as all the ones I have around here are full of Calcium Chloride, natural flavors, Potassium Sorbate, Sodium Benzoate and many of them have artificial sweeteners like Polysorbate 80. They are just a hot mess of additives so I am going to make my own.
From what I’m reading, both the relish and the sauce are better after it’s been sitting for a few days so I’m going to go ahead and get a head start on those.
While I had stuff out anyway, I noticed a pouch of chicken that had come in my @mrcookingpanda box and I thought I could use some of the scrappy bits from what I was doing to just put together a quick Chicken Salad as well. This will be great on a hot Quick Dough bun with some lettuce, tomato and cheese….. Yum!
Ugh! My feet are on fire… No more melon for me for awhile… This was super ripe and sweet and very tasty but like with Cantaloupe sometimes, it’s just a no go for now…

So today was a little weird. I thought I had a Dr Appt today at 1, but it turns out it was written down wrong and it is the 18th, not the 13th. So I fasted for bloodwork I didn’t have done, drove an hour round trip for nothing and then basically came home… 🤣
My original plan today was to do my appt, go buy dog food (next town over – 45min from home), do a Kroger shop, and then take myself to early dinner at my Chinese Buffet restaurant which reopened recently.
What actually happened was… I got very stressed trying to sort out this Dr thing, sat in the parking lot for ages, started to Kroger, almost got in two accidents (one person ran a red and someone else turned and almost T-boned me), decided it was wayyyyyy to “peoplely” out and I just needed to get back to my little hermit cave…
No dog food – ordered online instead No Krogers – will go on Mon No Chinese – maybe next week
The new Kroger ad started today and for the first time in weeks there are some good sales on fruit which I’m excited about.
I’m working on a menu plan for next week making some dishes I have never made but using some of my fridge / freezer goodies… . I’m going to eat as much fruit and veg as I can plan for until Mon, basically do a big clean out and get ready for a new shop.
I told Sandy some of my ideas and she said it all sounded good and to just surprise her and bring whatever. 😂 We are changing up her days this week a bit so we’ll see what happens…

#fearlessfridays are back! Weird week all around. It is: * Whale 🐳 Week and I’m all weepy and anxiety ridden… * Storms have been here for 3 days and I have felt really rough and been struggling a lot physically… * Didn’t eat yesterday at all and only a little the day before which absolutely has contributed to this loss…
I hurt from head to toe… But I’m still here, still trying, still pushing through…
Health wise – the lower oxalates continue to be making huge improvements in my general wellbeing – storms kicking up the Fibromyalgia and Mast Cell reactions aside, I am doing better than I have in years.
Today starts Week 9 of 12 – no food changes really except to hopefully feel like playing with my food again soon.

[Mast Cell Activation Syndrome or MCAS is my main issue but also fun things like Fibromyalgia, POTS, Histamine Intolerance, Insulin Resistance and on and on… ]
WILD WEIGHT SWINGS My weight fluctuations are not water weight, not sodium retention and the gains do not go away until the cells calm down and the actual muscle inflammation decreases.
When a flare happens, everything swells – my eyes, my hands/feet, my actual muscle tissue and organs … I can, and do, put on up to 20lbs in a bad flare and this can take 3-4 weeks to lose again.

👩🏻🍳 COOKING FOR SANDY DAY 3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much 😁 Today is one of her days. I’m enjoying having someone to cook for again.
