ExcelSteel 2 Egg Poaching Pot
Bring water to simmer (not rolling boil)
Spray egg cups with cooking spray or oil
Crack 1 egg per cup – duck eggs / jumbos just fit
Cook over MED heat for 4min
Remove immediately (pan, cups and lid will be hot ๐Ÿ”ฅ)

๐Ÿฅš PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.

Cook chicken eggs for 5 min (or duck eggs for 6 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 3-5 min, peel gently under running water and enjoy.

Combine all ingredients in a bowl with a fork or small spatula. Lightly spray your baking sheet or lay down some parchment paper and turn your dough out onto the tray. Using the fork/spatula, shape the dough to the thickness and diameter you want. Top with an egg wash and additional seasoning if you’d like. Bake and enjoy!

I worked on base coloring some figures for a privately commissioned paint job! Exciting! He is buying a set I started painting and had asked me to finish the rest of the set.

I started it 2yrs ago and tonight I started getting the base colors down on the unfinished models. I was very happy to be able to get so close to the original colors used given that they were a custom mix back then and I was using different Paints now.

3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility.

WELLNESS CHECK
Not good –  but I knew that… I have been feeling crummy for a long time and here is the black and white of it.   The meds only work for so long before we have to increase them… I was down to the 150s / high 90s but it’s right back where it was.

Eating more meals today was…. Interesting… ๐Ÿ˜‚

At the beginning of the day I thought there is no way I’m going to be able to eat all this today and I felt like I was just kind of constantly making something and then cleaning it up and then making something and then cleaning it up… ๐Ÿ˜‚…

Now I don’t have a whole lot going on so it was fine but I was surprised that by about my 8.00 meal – I was actually a little hungry, which for me is unusual.   Feed the metabolism…

I made it through Day 1 with everything that I had pre tracked and hit all of my targets which is fantastic.   I did take a look at what my heart rate was after eating so I had a baseline to go from and it was pretty much what I thought it was – in the low 130s.   Now keep in mind this is just sitting at the table doing nothing.  

I had a lot of very simple things – the only thing that I even used to cook today was the air fryer twice and then the microwave for the shrimp and zucchini.   Everything else was just as is…. Easy peasy…

So how do I feel at the end of Day 1?

Medical stuff aside –  I think this is certainly doable with some planning.   I am looking forward to getting my BP and HR down so I can see what effect this has when I’m not in a bad reaction state. The only thing I am going to change is I am going to try 5 instead of 6 meals tomorrow… It was a bit of a hard press today.

I also need to change my volume eating habit (eat more lower calorie foods) – so I am going to balance smaller volume, higher calorie items so I’m not eating so much to fill my metrics. Definite change…

DAILY MEAL HIGHLIGHTS

Let’s get this day started…

POLISH DILL PICKLE SOUP
This is one of the soups I meant to make earlier as my filler soup. Dividing it up into 6 servings (will measure once it is cooled and I add the yogurt) makes it 52 calories per serve.

โ–ช๏ธ Chicken Stock
โ–ช๏ธ Dill Pickle Juice
โ–ช๏ธ Dill Pickles
โ–ช๏ธ Zucchini
โ–ช๏ธ Kale
โ–ช๏ธ Rainbow Carrot
โ–ช๏ธ Turnip
โ–ช๏ธ Garlic / Ginger
โ–ช๏ธ Greek Yogurt

I substituted turnip for the potato,  added zucchini and kale and am using Greek Yogurt in place of the sour cream…

โ–ช๏ธPut everything except corn starch and yogurt in Instant Pot. 
โ–ช๏ธHigh Pressure 3 min and Quick Release.
โ–ช๏ธMake cornstarch slurry and add to hot soup.   Mix well.
โ–ช๏ธLet cool and stir in yogurt to avoid it breaking or just add yogurt when serving (which is what I do)

NO KNEAD SEEDY ARTISAN BREAD
I am no baker but this bread is one of my favorites. If you like a seedy, chewy, sourdough / caraway style bread – this is fantastic.

Makes 1 loaf – this weighed 842g cooked and I get about 16 slices from it at 72 cal / slice so about like a Dave’s Killer Bread slice…

2 cups self rising flour – if using all purpose flour – add 2tsp (8g) baking powder per cup of flour

2tbsp caraway seeds
2tbsp cumin seeds
2tbsp minced onion
2tbsp Italian Seasoning
1tbsp granulated garlic (or garlic powder)
Season as you like – use different seeds or no seeds – add 1tbsp sugar or honey for a sweeter bread or experiment with adding applesauce or pumpkin to adjust the flavor. It will change the density so you will have to play with it if you want to try those.

1ยฝ cups water
ยพ cup Greek Yogurt

โ–ช๏ธMix dry ingredients.
โ–ช๏ธMix water and yogurt to basically a milk consistency.
โ–ช๏ธCombine wet and dry ingredients and mix into a shaggy dough.
โ–ช๏ธNo kneading, no rolling it out – just combine.
โ–ช๏ธPour into well greased loaf tin.
โ–ช๏ธCover lightly and let proof in a warm place for 45-60min.
โ–ช๏ธBake at 425ยฐ for 20min.
โ–ช๏ธLet cool and cut into slices or cut as you go.

This is fantastic toasted – it has all the nooks and crannies like an English Muffin!

Freezes well.
