Chicken, pasta and veggies swimming in a creamy, cheesy sauce – what’s not to love! Surprisingly this is my first time making it though.
I used Konjac Noodles to keep the calorie and carb count down but any pasta will work. I also wanted more saucy goodness so I increased ratios to my own tastes… And had a side salad of course.

๐ฅ PERFECT SOFT BOILED EGGS In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.
Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.
If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.
Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.
Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.
โก New product from Weee! – the Noodle texture was brilliant – especially for a 0 carb Noodle! The sauce was good but very similar to a standard Italian sauce which was sort of odd in an otherwise Asian bowl… ๐คฃ I am going to look to see if I can buy the noodles on their own…

Today I’m feeling much better than the last few days… Which is fantastic however we just got another winter storm advisory so I’m not sure it will last ๐ but let’s make the best of it while I am okay.
I bought some thin cut bottom round steak from Kroger on special because I wanted to do some Beef Jerky.
Not a fault of the recipe but of me completely… I have had the clams in the freezer for ages, I thawed them too quickly/impatiently, I didn’t cook off the wine first and I adjusted the recipe lazily…
I ate the clams, which looked beautiful, but the broth was not nice at all. I adjusted my tracking as I ate the veggies and clams out of it but didn’t eat the broth… Bleh! Again – not the recipes issue – totally on me…
