If you saw my “Where Have I Been?” video:

… you’ll be all caught up but the gist of the last week is this…

I had a really rough week both physically and emotionally where I basically ate either a SmartOne frozen meal, a can of soup or a can of chili beans every day. Nothing to show you.

I didn’t cook and I didn’t make wise food choices from a food reactivity standpoint. Between weather changes, stress and eating far more processed stuff than normal… I currently have an +11.6lb inflammation gain.

So part of getting back into the swing of things is to prep a bunch of meals I could freeze so that if I am hurting, I can pull one out and know what I’m eating fits what I need to be doing.

Today was Day 2 of prepping and I had decided to make enough to take Sandy some of everything so she will have plenty to choose from.

๐Ÿฅš PERFECT SOFT BOILED EGGS ๐Ÿฅš
In small saucepan, bring enough water to completely cover the eggs (by at least an inch) to a rolling boil. Reduce temperature to med and when the water reduces to a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack. I use a slotted spoon.

Cook chicken eggs for 6 min (or duck eggs for 8 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Preheated – Middle Rack
350ยฐ for 20min on parchment lined baking tray – crust only first – flip – add toppings – cook an additional 10min.

๐Ÿ… BASIC INSTANT POT (or similar) MARINARA

๐Ÿง… Onions – I like Red Onion but anything from Spring Onions to Shallots will work
๐ŸŒถ๏ธ Peppers – Bell, Poblano, Anaheim, Jalapeรฑo or Shishito (*optional)
๐Ÿ„ Mushroom (*optional)
๐Ÿฅ• Carrots/Celery (*optional)
๐Ÿง„ Garlic
๐ŸŒฟ Rosemary, Thyme, Oregano, Basil to taste
๐Ÿง‚ Seasoning of your choice to taste – I like Minced Onion, Parsley Flakes, Smoked Chili Sea Salt, Nutritional Yeast, Soy Sauce, Italian Seasoning

๐Ÿ”ช Roughly chop vegetables. Add everything to the pot and set for 25min on Pressure/Manual. Natural Release for 15min. No liquid added/needed as the tomatoes release plenty of their own.

๐Ÿ”นIf you want a thicker sauce, add a can of tomato paste.

๐Ÿ”น If you want a thinner sauce, add a can of crushed tomatoes or 1 cup of your favorite stock.

๐Ÿ”นIf you want a smoother sauce, blend with an immersion blender or in a food processor after it has cooled.

๐Ÿ”น If you want a chunky style Farmhouse Sauce, chop your veggies into appropriate size pieces to leave intact after cooking.

3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much ๐Ÿ˜ Today is one of her days.

SEASONING: Garlic Powder, Onion Powder, Tumeric, Paprika, Italian Seasoning

You can use leftover rotisserie chicken, canned chicken or ground chicken/turkey here. Remove as much moisture as you can if you want a crisper final product.

Combine in a bowl, mixing well. Place mixture on a piece of baking paper, cover with a second sheet of baking paper and roll thinly. Bake in a 400ยฐ oven 15-20min depending on your oven. Some people flip it or put it on a wire rack to crisp evenly – or just leave it on the sheet pan. Add toppings, return to oven for an additional 10min or so.

Trim artichoke stem (and petal tips if needed). Cut off the top inch or so of the artichoke and rinse to remove any dirt between the petals. Place Artichoke on trivet or in steamer basket face up, squeeze juice of 1 lemon into the crevices (*optional), add lemon halves to pot with 1 cup water.

Chef IQ preset said 12min / High Pressure + Quick Release
Cooking in my little 3.5Q takes 20min / High Pressure + Natural Release so I was a little skeptical.
