👩🏻🍳 COOKING FOR SANDY DAY A few days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility.
We often share a meal kit or something similar and spend some time together since neither of us go out too much 😁
Today is one of her days. I’m enjoying having someone to cook for again. I haven’t cooked for her in several months because I was sick and didn’t want to get her sick. Butter Chicken is one of her favorites so I made it for her today…
🥣 SKINNY PICKLE SOUP & TUNA SANDWICH ▪️ Skinny Pickle Soup (our 60 cal soup challenge) ▪️ Seedy No Knead Bread (the one I made last week) ▪️ Bacon Ranch Tuna Piuch ▪️ Little Gem Romaine Lettuce Hearts ▪️ Tajin Hot Sauce
DAILY MEAL HIGHLIGHTS 🌞 Good morning 🌞 gentle friends! Let’s get this day started…
POLISH DILL PICKLE SOUP This is one of the soups I meant to make earlier as my filler soup. Dividing it up into 6 servings (will measure once it is cooled and I add the yogurt) makes it 52 calories per serve.
I substituted turnip for the potato, added zucchini and kale and am using Greek Yogurt in place of the sour cream…
▪️Put everything except corn starch and yogurt in Instant Pot. ▪️High Pressure 3 min and Quick Release. ▪️Make cornstarch slurry and add to hot soup. Mix well. ▪️Let cool and stir in yogurt to avoid it breaking or just add yogurt when serving (which is what I do)
NO KNEAD SEEDY ARTISAN BREAD I am no baker but this bread is one of my favorites. If you like a seedy, chewy, sourdough / caraway style bread – this is fantastic.
Makes 1 loaf – this weighed 842g cooked and I get about 16 slices from it at 72 cal / slice so about like a Dave’s Killer Bread slice…
2 cups self rising flour – if using all purpose flour – add 2tsp (8g) baking powder per cup of flour
2tbsp caraway seeds 2tbsp cumin seeds 2tbsp minced onion 2tbsp Italian Seasoning 1tbsp granulated garlic (or garlic powder) Season as you like – use different seeds or no seeds – add 1tbsp sugar or honey for a sweeter bread or experiment with adding applesauce or pumpkin to adjust the flavor. It will change the density so you will have to play with it if you want to try those.
1½ cups water ¾ cup Greek Yogurt
▪️Mix dry ingredients. ▪️Mix water and yogurt to basically a milk consistency. ▪️Combine wet and dry ingredients and mix into a shaggy dough. ▪️No kneading, no rolling it out – just combine. ▪️Pour into well greased loaf tin. ▪️Cover lightly and let proof in a warm place for 45-60min. ▪️Bake at 425° for 20min. ▪️Let cool and cut into slices or cut as you go.
This is fantastic toasted – it has all the nooks and crannies like an English Muffin!

Many thanks to @krogerco and @misfitsmarket for providing all my gorgeous produce.
Thank you for joining me today. Until tomorrow… In Love ♥ and Light 💫
🆕 – I am not a fan of the texture of the cashew cheese spread. The flavor was okay but it is a bit gritty. I thought combining it with other foods might make it better, but I think I will take it down to Sandy and see if she likes it.
I never knew Tajin made a hot sauce and this I quite liked. It tastes like Valentina Hot Sauce (which is my favorite) with a little lime. Very nice!
** I eat yolks only due to a histamine reaction to egg whites – but I generally cook them whole, then remove the whites **
🔘 Eggs beautifully poached in ExcelSteel 2 Egg Poaching Pot Bring water to simmer (not rolling boil) Spray egg cups with cooking spray or oil Crack 1 egg per cup – duck eggs / jumbos just fit Cook over MED heat for 4min Remove immediately (pan, cups and lid will be hot 🔥)
Or try these other methods:
🥚 PERFECT SOFT BOILED EGGS In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.
Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.
If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.
Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.
Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 3-5 min, peel gently under running water and enjoy.
♨️ COOKED IN @ninjakitchen Foodi Smart XL Air Fryer Oven Preheated – Middle Rack 400° for 15min
They weren’t as crispy as I’d like, probably because I have an air fryer oven which has a larger space and doesn’t concentrate the heat in the same way – so I just turned on BROIL for an extra 4 minutes. Yum! 👅
