๐Ÿ†• – I am not a fan of the texture of the cashew cheese spread. The flavor was okay but it is a bit gritty. I thought combining it with other foods might make it better, but I think I will take it down to Sandy and see if she likes it.

I never knew Tajin made a hot sauce and this I quite liked. It tastes like Valentina Hot Sauce (which is my favorite) with a little lime. Very nice!

ExcelSteel 2 Egg Poaching Pot
Bring water to simmer (not rolling boil)
Spray egg cups with cooking spray or oil
Crack 1 egg per cup – duck eggs / jumbos just fit
Cook over MED heat for 4min
Remove immediately (pan, cups and lid will be hot ๐Ÿ”ฅ)

๐Ÿฅš PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.

Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 3-5 min, peel gently under running water and enjoy.

I was recommended to try a new (to me) egg poaching pan instead of doing soft boiled eggs. My friend Kim swears it would be perfect – runny yolks, whites completely done (which makes them easy for me to separate since I can’t eat the whites for histamine reasons)

I have tried lots of poaching techniques over the years, both microwave and stovetop and just never got a result I preferred over soft boiling.

It was okay – but I tried to get slick cooking the Asparagus, Zucchini, Corn and pasta in the Instant Pot – it was too long for the asparagus and zucchini so they were mushy, the corn was great and the pasta cooked well but I like a more al dentรฉ noodle so less time next time…. And just steam the veg like I usually do…

I do think pasta in the IP would do well for me with a little less time and my Chef IQ gave me a great idea… Using the steamer basket sitting on the bottom prevents a burn notice and is self straining (see daily video) – very cool!

3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much ๐Ÿ˜

Today is one of her days. I’m enjoying having someone to cook for again.

I needed to take her down the Pot Roast I made for her and since the very nice farmer I buy my duck eggs from gave me a free dozen chicken eggs when I picked up my order (and I had bought eggs a couple of weeks before) I had way too many.

I asked Sandy if she wanted me to do some eggs for her and she wanted egg salad and deviled eggs. So I cranked up the Instant Pot and made her some of each.

I can’t believe it’s been 6 months since I started my 12wk Reset. At the time, I took egg whites out for 6 months because I reacted to them and today I retested by having whole eggs – still a no go…

I can have them as an ingredient in some things like pasta or mayo, but as far as just eating the whites on their own or as part of the egg itself… Nope nope…

This was the third test so that pretty much decides it. I’ve reacted, not horribly but enough, that they need to just go on the permanent – not a good idea – list.

Trim artichoke stem (and petal tips if needed). Cut off the top inch or so of the artichoke and rinse to remove any dirt between the petals. Place Artichoke on trivet or in steamer basket, squeeze juice of 1 lemon into the crevices (*optional), add lemon halves to pot with 1 cup water.

Cook 15min for medium and 20min for large artichokes on High Pressure + Natural Release

Trying to replicate a noodle kit I love from Weee! that just has too many ingredients I am staying away from. This was close – and good – but I needed a pickled element to cut the richness of the peanut sesame.

I adore pickled bamboo shoots – so I tracked down a recipe. I am going to try this with the rest of the can of shoots and sprouts I have open.

There is no vinegar in this recipe which I saw in many of the others so I’m going to add rice vinegar as well.

I tried the Steam setting on my Smart Cooker for the egg and I assumed since it was a duck egg (larger /thicker shell) that if I used Medium Boiled – I would maybe get a actual soft boiled… Nope it was a beautiful medium… So I’ll try the soft boiled Steam setting for the next one.

๐Ÿฅš PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.

Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.

I tried an experiment with my Chef IQ Smart Cooker – I know lots of people use their Instant Pot for cooking hard-boiled eggs but I hadn’t found much success in doing it with soft-boiled.

I’ve tried egg cookers and various devices and gadgets but in the end I kept going back to the stovetop. My Smart Cooker has slightly different settings that it recommends – the first being using low pressure for soft-boiled but it actually recommends a Steam setting as well. I’m going to try the steam setting next time but this time I just went with the settings in the Smart Cooker itself.

Now keep in mind that I’m using duck eggs and they have a harder shell and are larger than what the settings were originally designed for so I was a bit skeptical.

No need!

They came out brilliantly.

I’m going to try a couple of adjustments to the pressure settings and try the steam function but I think this will definitely be how I do my soft boiled eggs going forward.

Soft Boiled – 2min – Low Pressure + Quick Release
Hard Boiled – 5min – High Pressure + Quick Release
