I have been wanting to try my hand at making this for awhile and finally got all my ducks in a row to do it. There are tons of different recipes depending on how you want to cook it and what region the recipe is from. I used a combination of these. I am not making the tacos – I just wanted it as a stew.

Techniques vary widely as well. Some recipes say to toast the chilis and aromatics, some boil or presoak the chilis, some sear the meat first, some use stock, some use water and powdered bouillon, some put everything in the pot together, some make the sauce first… There are a lot of variations!

As I have never done this recipe before – look at the traditional recipes above and decide for yourself what you want to do.

RECOMMENDED TIPS I SAW & USED
* Take your meat out at least an hour before cooking, season it and allow it to come to room temperature.
* If you are sensitive to chilis or their seeds, be sure and wear gloves when deseeding.
* Depending on your blender, you may need to strain the chili sauce to remove the small pieces of skin left over from the chilies.
* if you are blending the liquid hot, be sure to either use a blender that has an opening at the top to allow pressure and steam to escape or if like me you don’t have one of those you will need to let the liquid cool before blending. [ Full explanations in the recipes ]

Because I don’t have a super powerful blender – I decided to cook everything together and blend afterwards.

💮 QUICK PICKLED RED ONIONS
In the first recipe, I was reminded of pickled onions which I normally keep on hand but didn’t have so I started by doing a quick pickled red onion which I knew would be ready by lunch time. Here are a few recipes to try if you aren’t familiar with making them.

💥 EPIC FAILS 💥
HERICIUM BEAUTY ISINGLASS SOUP
I bought this “soup” – which was a mix of dried ingredients, that for many of them, I had no clue what they were.

Yeah… Hard NO! Oh, so much no… Full details in the video but suffice to say it may have been the single most revolting experiment I’ve ever tried. 🤮

I messaged my cousin to see if she wanted me to keep it for her 😂

PURPLE RICE PUDDING BOWL
Blow by blow in the video but the short version is this. I was cooking, cooking, cooking – having a fun #experimentsineating day. Got one of the Ramen Broths started and decided to have breakfast.

Used a new food colorant (Ube / Purple Sweet Potato) – 3 drops in the rice pudding… Pretty pretty!

Ate 2 tbsps…

💣 Had an immediate and very big reaction – my eyes swelled, my tongue went numb, I lost feeling in my fingers, burning in my feet… It was very fast and lasted about 6 hours.

I laid down for several hours and then finished up the second broth but definitely did not feel like eating.

I was recommended to try a new (to me) egg poaching pan instead of doing soft boiled eggs. My friend Kim swears it would be perfect – runny yolks, whites completely done (which makes them easy for me to separate since I can’t eat the whites for histamine reasons)

I have tried lots of poaching techniques over the years, both microwave and stovetop and just never got a result I preferred over soft boiling.

It was okay – but I tried to get slick cooking the Asparagus, Zucchini, Corn and pasta in the Instant Pot – it was too long for the asparagus and zucchini so they were mushy, the corn was great and the pasta cooked well but I like a more al denté noodle so less time next time…. And just steam the veg like I usually do…

I do think pasta in the IP would do well for me with a little less time and my Chef IQ gave me a great idea… Using the steamer basket sitting on the bottom prevents a burn notice and is self straining (see daily video) – very cool!

👩🏻‍🍳 COOKING FOR SANDY DAY
3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much 😁 Today is one of her days. I’m enjoying having someone to cook for again.

She hasn’t been feeling the best so she asked for something relatively bland. She asked if I had any salmon so I made her some smoked salmon, snow peas with a bit of garlic butter and she asked for potato salad. No problem!

Over the last few days I slowly made a batch of Cracked Pepper & Herb Paté… I used a combination of these 2 recipes:

Super simple – cook the liver, onions and aromatics – let cool – blend into a paste – chill – then optionally top with either a fruity gelatin layer or ghee.

This just stops the oxidation process if you aren’t going to eat it all straight away. I wasn’t sure how much it would make but as I did it below, it made 4 ramekins of about ½c each.

I tried it once before with a pomegranate gelatin top but I just don’t like the texture of gelatin and just used it to seal it. This time I adjusted some of the seasoning amounts and used some ghee to seal. It needs to chill overnight and I will try it tomorrow!

The storms have kicked up my autoimmune issues and I haven’t felt like doing a whole lot of my usual creative cooking… I haven’t been doing or eating much so this is the last few days… Pretty straight forward meals… My BP is giving me trouble and I have Darth Vader breathing going on…

I didn’t think it could get better. I WAS WRONG! This is near perfection! I wanted a strong Sourdough flavor – so I found a bunch of recipes and played around with things… And dang the result is magnificent. Now that I know what I am doing a bit more – I’ll do an updated video with my refined measurements next time…

I started with the same basic English Muffin Bread Loaf I made last time… I don’t have a Sourdough starter… I’ve managed to kill 2… I think, like cactus, I overloved them… 🤣

So I did some experimenting with Greek Yogurt and Apple Cider Vinegar and added Caraway and Black Cumin Seeds (lower in oxalates than normal Cumin seeds by quite a bit). I made 2 loaves – one in a normal loaf pan and the other I tried out my baby Dutch Oven.

I need to play with the Dutch Oven some but ya’ll….. YA’LL….. this bread is the BOMB 💣 I got 18 thick slices at 86/cal a slice with no artifical ingredients. Put it in the freezer… If you don’t, you WILL just eat it… 🤣

🍞 ENGLISH MUFFIN BREAD LOAF #experimentsineating

All the crispy, crunchy goodness of a well done English Muffin, full of butter hugging nooks and crannies – but in loaf form – what Magick is that??

I thought for sure I had royally screwed it up somewhere – I have made 1 other bread in my life – I don’t bake cakes or cookies – I’m just not a baker…

But this was so good – like dangerously good. I had 2 pieces for lunch and another 2 with dinner. I’m going to have 2 with my Pub Style Split Pea Soup tomorrow. It’s just that good! Even if I did mess it up a little… 🤣
