I often will add things like Caraway or Cumin Seeds or if I am down to a little seasoning in the bottom of a bottle – I’ll add that in. My current favorite combination is to add a container of Kroger’s new Private Selection 5 Salt / 5 Pepper Seasoning – I used to use McCormick’s Roasted Garlic and Herb but they changed the formula and it now contains “Natural Flavors” so I don’t use it any more.

🍈 INSTANT POT PUB STYLE SPLIT PEA SOUP [Freezer Meal]

This is the last of the freezer meals I am going to do for awhile.  In the last few weeks I have put up

3x Italian Wedding Soup
3x Chicken & Dumplings

Plenty to have on hand… All but the last two were Smart Cooker / Instant Pot meals – for someone who swore she didn’t need one, I sure do use it a lot now!

While digging around in the pantry for something else completely, I spied a bag of split green peas and knew I wanted to do a Split Pea Soup – off to Google!

I saw lots of recipes but decided to use these as my base. I wanted a brighter green, more pleasant to look at version than many were so decided to look for green soups – talk about going down a rabbit hole:

I decided to blanch and puree some green peas and curly kale to stir in after cooking – the key here is going to be to blanch the kale but not cook it fully – it goes a dark olive muddy color otherwise.

Then I saw this one and thought – heck yeah… So what follows is a mashup of the above and this:

My store didn’t have any ham bones or hocks but I am the determined sort and I saw some Smoked Turkey Necks – not the same but that will work. 

I decided with everything else I was adding, I wasn’t going to do the traditional mirepoix of carrots, celery and onion.

I don’t drink but I do occasionally cook with alcohol.  The Pub Style recipe calls for 12oz of light beer.  Ummmmm…. Okay…. But what kind?  I asked a very helpful gentleman (another customer) in the beer aisle and my cousin and the verdict was Bud Light.  Okay – done…

Let’s get to assembling as this is going to be a little different than the straight recipes.  I put my stock, beer, turkey necks, peas, potatoes, garlic, seasonings and mustard into the inner pot.

Cook 15min on High Pressure + Natural Release

While that is cooking, I stripped the kale and blanched it with the peas for a few minutes then put in the blender with some water, lemon juice and sea salt.  I meant to get some parsley but I forgot. Blended until smooth and set aside.  Rinsed the peas and carrots and chopped up the ham.

Once the Smart Cooker was finished, I took the turkey necks out and used a potato masher to make the rest smooth.  Taste test for seasoning… Don’t burn tongue…. Beautiful!

Removed the meat from the necks and put that back in the pot with the blended kale and peas, the peas and carrots and the chopped ham… It smells soooo good….

I kept the bones – lots of meat left on them and I need to make some more Instant Pot Chicken Bone Broth tomorrow so this was perfect.

I am going to freeze them at this point. I will add fresh pea shoots and yogurt when serving – those won’t hold up well to freezing. I got 6 servings to freeze for me, 2 servings to give Sandy and my lunch serving. Whew!

Paired with my last two slices of the gorgeous English Muffin Bread Loaf – this is delicious and would make brilliant croutons! So tasty!

I can’t believe it’s been 6 months since I started my 12wk Reset. At the time, I took egg whites out for 6 months because I reacted to them and today I retested by having whole eggs – still a no go…

I can have them as an ingredient in some things like pasta or mayo, but as far as just eating the whites on their own or as part of the egg itself… Nope nope…

This was the third test so that pretty much decides it. I’ve reacted, not horribly but enough, that they need to just go on the permanent – not a good idea – list.

🥚 PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.

Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.

🥘 BISON SHEPHERD’S PIE
I didn’t have any ground beef but I did get a package of ground bison on sale at Kroger and thought – that will work.

I cooked the potatoes in the Chef IQ Smart Cooker. I just quartered them and put them in the steamer basket. Super easy and you don’t even need to peel them first. The skin just slides right off afterwards. Mashed and added the milk, half n half, butter, cream cheese, garlic powder, parsley and salt/pepper.

Meanwhile cook the bison and veggies in the stock/cornstarch/steak sauce mix

I had 1½ servings for dinner, put up 2 servings to freeze and am taking Sandy 2 servings. I originally made the salad to go with it but didn’t eat it… It will be tomorrow lunch…

Combine all ingredients in a bowl with a fork or small spatula. Lightly spray your baking sheet or lay down some parchment paper and turn your dough out onto the tray. Using the fork/spatula, shape the dough to the thickness and diameter you want. Top with an egg wash and additional seasoning if you’d like. Bake and enjoy!

🌀 INSTANT POT BROCCOLI CHEESE SOUP

🧊 FREEZER MEAL PREP 🧊 – 8 servings
Based on and adapted from:

This, as per my usual, is a bit of a mashup of ideas I found in various recipes… Some recipes may only mention 1 additional ingredient (like mustard or wine) and I’m like – heck yeah – let’s add that. 😂

I used:
▪️Homemade Chicken Bouillon
▪️White Wine (or Light Beer – completely optional)
▪️Celery – many recipes add Carrot/Onion as well
▪️Broccoli – great way to use up extras
▪️Potato – any kind – I like Yukon Gold for soups or I even saw people using frozen hashbrown potato – you could replace this with cauliflower or even turnip if you are wanting a lighter option
▪️Garlic – fresh, minced, dried powder – all okay
▪️Dijon Mustard – can use any type or just omit
▪️Salt/Pepper

▪️Milk – I used 2% but you can use any % – dairy alternative milks should work just as well – you could also use half n half or heavy cream here
▪️Cornstarch (optional if needed to thicken)
▪️Pepper Jack Cheese + Sharp Cheddar Cheese NOTE: Use any cheese you like. This is what I had on hand. I prefer the block cheeses as the shredded is usually treated with an anti caking agent and doesn’t melt the same. Use full fat, fat free, any flavor you like though the sharper cheeses work better than say a Mozzarella. A rotary grater is a lifesaver here.

Chop veggies and put everything except milk, cornstarch, cheese in the pot. You don’t have to peel the potatoes unless you want to.

High Pressure 5min + Natural Release

Once release is finished, add milk (+ cornstarch if using – I almost always do in soups I want to be thick – just mix it right in the milk) – then use an immersion/stick blender to puree as you want. Add the cheese, rest the lid on it for about 5 minutes for it to get all melty – then just stir and serve!

🧆 MEATBALLS
▪️98% Lean Turkey Breast (home ground)
▪️Italian Sweet Sausage (remove casings)
▪️Egg (I used a duck egg yolk only)
▪️Panko*
Combine and shape into meatballs – a melon/cookie scoop is very handy for that. Or use your favorite frozen meatballs.

Precook in oven, air fryer or skillet. I used:

I had a rough day today with the weather and spent most of it resting/recovering. I didn’t eat until really late so I only had these two meals.

🥚 PERFECT SOFT BOILED EGGS
In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.

Cook chicken eggs for 6 min (or duck eggs for 7 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.

If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.

Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.

Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 5 min, peel gently under running water and enjoy.

I tried an experiment with my Chef IQ Smart Cooker – I know lots of people use their Instant Pot for cooking hard-boiled eggs but I hadn’t found much success in doing it with soft-boiled.

I’ve tried egg cookers and various devices and gadgets but in the end I kept going back to the stovetop. My Smart Cooker has slightly different settings that it recommends – the first being using low pressure for soft-boiled but it actually recommends a Steam setting as well. I’m going to try the steam setting next time but this time I just went with the settings in the Smart Cooker itself.

Now keep in mind that I’m using duck eggs and they have a harder shell and are larger than what the settings were originally designed for so I was a bit skeptical.

No need!

They came out brilliantly.

I’m going to try a couple of adjustments to the pressure settings and try the steam function but I think this will definitely be how I do my soft boiled eggs going forward.
