I’m hurting a bit much today and didn’t sleep well last night so I’m not feeling like dinner. I’ve tracked like 3 separate options and don’t want any of them so I am just going to call it a day.

I am hoping to feel well enough to join my cousin Tracy on a little excursion to Virginia tomorrow so a bit of extra rest tonight isn’t a problem.

The Kroger ad changes on Wed so I went to town to get some things on sale… Juice, toilet paper, a certain yogurt, potatoes… ๐Ÿคฃ… you know, the usual. Well they were out of the juice, yogurt and the toilet paper so I’ll have to go back next week before it changes. I did get some other cool stuff though.

Tracy, my cousin, wasn’t feeling well so after shopping (and catching up with a friend I haven’t seen in ages) I had dinner out at Tampico …

I had dinner at my favorite Mexi place (Steak, Chicken & Shrimp ๐ŸŒฏ Fajitas)

I should have remembered I never eat it all and when I pretracked I counted the entire meal… Welllllllll I only ate some of it – the rice, beans and the shrimp they don’t reheat well, and ended up with more than 500 calories left.

I have been very lucky eating here – as long as I don’t eat the salsa (Calcium Chloride), I have had no trouble here.

It’s like seafood from Peking House – there may be MSG in some things but I don’t react to that and have no reactions eating there.

She and her family invited me to have Thanksgiving with them at her house… The weather is due to turn again on Thursday so I’m not sure how I’m going to feel, but if I am okay, I am taking some sides and hopefully having a meal with them.

She will have leftovers from that as well so she doesn’t need me for a little while.

I have started thinking about offering to plan, shop and cook for a few families next year… Maybe I can help some overworked parents or elders who just need some help…

I’m going to work on the idea through the holidays and might talk to Elder Care and my doctor to see if they know anyone local that might need or enjoy the help… Just tossing the idea around…

I went to town today for the first time in several weeks. I ran errands and did some shopping which, honestly, has been super difficult and painful for the last 9 months to a year. I had to put my cane in my car and at one point it got so bad I ordered a walker. Normally, if I go out, I need to not be out any longer than a couple of hours and if it is hot outside that is down considerably.

Today was a beautiful day in the low 70s and I thought I could get a little bit more done than usual. It turns out that I got a lot more than I expected. I was actually able to go to 8 different stores, I spent over 6 hours out which has been unheard of and when I got home I wasn’t ready to just crash and burn for the rest of the night.

I picked up some new shirts from Roses – super cheap – home were $1.99 and the rest were $4.99.

Then I went to Big Lots to look for a new bed. This will be the first time in my entire life that I am purchasing a brand new. I would love your opinion on this. I have two headboard options that I’m looking at. Which one do you like?

Since I was doing so well I decided to tempt fate and eat at my favorite Mexican restaurant. Normally I have to leave something like that until the end of the day because eating out created such a problem with my BP and breathing that I couldn’t do anything except go home directly after that.

Today I made sure that I customized my order to fit what I needed both histamine and oxalate wise and I had NO reaction. I was able to eat lunch in the middle of the day and continue to run errands afterwards which I haven’t been able to do in years.

I really think I’m on to something here…

RED LENTIL TORTILLAS

๐ŸŒฏ Makes 6 Burrito (large) or 8 Taco (small) size tortillas

CORE NOTES:
๐Ÿ”น Soak lentils for at least 6hrs or up to overnight. Blend, preferably in a blender but a food processor will work, including the soaking liquid, until smooth. Batter will be between a crepe and pancake batter consistency.

๐Ÿ”น Pour a thin layer into a lightly oiled pan over medium heat. Spread to an even thin layer. Cook, flip, repeat. Soft, chewy, and very pliable when done.

๐Ÿ”น You can then air fry or bake these, cut into chips. 375ยฐ for 10min. Top with cinnamon sugar (and honey afterwards) to make sopaipillas or season for a savory chip – sea salt and vinegar, ranch, chili and lime… Whatever you like… Popcorn Seasoning works really well for this…

Oven times and temperatures will vary so watch them carefully.

๐Ÿฅฆ Almost all of my vegetables are either steamed in my @goodcooks Microwave Steamer or water sautรฉed and then seasoned afterwards. This keeps them fresher looking and since I am not a fan of soggy vegetables I can control the level of crunch which I appreciate. Plus of course it is less points than cooking in oil or butter. If I want those for flavor, I add it at the end.

Not feeling a whole lot better today in general. I skipped cooking for Sandy today and spent most of the day in bed… I made sure she was okay, she has leftovers and just in case this is some kind of fun cooties, I don’t want to spread the love.

While I was in town yesterday I had stopped at my local Mexican place and got Carnitas to go but didn’t feel like eating. I wasn’t really feeling like eating today either, but I only have a 24hr window for leftovers due to histamine buildup, so I ate them today anyway.

I managed about 1/3 of it for brunch and finished the rest over the course of the day.

I’m not sure what’s got me feeling so rough – a combination of the stormy weather and general autoimmune blahs I guess.

I see my doctor next week for the first face to face visit in awhile and hopefully she has some suggestions on my increased symptomolgy…

I have errands to do in town tomorrow but I’m still feeling rough so it will be as short of a trip as possible.

Hopefully I am back to a bit more normal soon…

Welcome to Thunderstorm Thursday!ย 

I woke up all super poofy to a beautiful rainy day. I love the rain but my feet and hands surely do not.ย  Even the dogs wanted to just be curled up in bed. They have the option of the whole house or outside and they both were very much bedbugs this morning… And don’t worry… The Collie is not as big as a house – between a bad angle, lots of hair and a poofy butt – he just looks that way!

Things changed a little bit from my original plans and I ended up not cooking for Sandy today. She has leftovers of leftovers and someone bringing her a meal tomorrow so we decided to skip today. 

So I spent the afternoon working on things for tonight’s live Facebook meeting. Time got away from me and even though I was feeling some better and was hungry by 6pm or so, I didn’t eat anything until after 10pm by the time I finished the meeting and fixed dinner… But it was very tasty… 

So one meal today… Just dinner..
