I had the chance to spend the day with my cousin and we went over to Virginia. We had lunch at Ocean Samurai in Blacksburg, VA. I ordered 2 pretty plain rolls to avoid as much food reaction as possible and 2 appetizers and split them over the whole day.
Wayyyy over on carbs, but it was a lovely chance to spend time with her and I only ate once the day before (had over 1000 calories left over), so I wasn’t worried.

@dannon @oikos 3tbsp 0% Greek Yogurt @fairlife 2tbsp Skim Milk @bobsredmill 1tbsp Nutritional Yeast (optional) @assi 1tsp Coarse Sea Salt *If you are not adding the nutritional yeast, you may need less yogurt/milk as there are less dry ingredients.
NO STICKY HANDS PREPARATION Combine all ingredients in a bowl with a fork. Lightly spray your baking sheet or lay down some parchment paper and turn your dough out onto the tray. Using the fork, shape the dough to the thickness and diameter you want. Top with an egg wash and additional seasoning if you’d like. Bake and enjoy!

๐ฅฆ Almost all of my vegetables are either steamed in my @goodcooks Microwave Steamer or water sautรฉed and then seasoned afterwards. This keeps them fresher looking and since I am not a fan of soggy vegetables I can control the level of crunch which I appreciate. Plus of course it is less points than cooking in oil or butter. If I want those for flavor, I add it at the end.

๐ฉ๐ปโ๐ณ COOKING FOR SANDY DAY 3 days a week, I cook meals for a neighbor who had a stroke last year and has limited mobility. We often share a meal kit or something similar and spend some time together since neither of us go out too much ๐ Today is one of her days. I’m enjoying having someone to cook for again.
This month she has a friend staying for a month so I’m cooking for them both. Today she requested I do the Butter Chicken dish I did a few weeks ago.
