This was completely expected. There are quite a few things going on – but first and foremost is that I had a month of eating out much more often than I normally do.

Generally I eat out maybe twice a month but in the last 2½ weeks, I ate out 9 times so between the extra sodium (even though I stayed within my calories) and the fact that we have had a big storm come through and that has created some inflammation, I knew that I was going to see a gain on the scale today.

A lot of this will go away in the next week once the inflammation and sodium have run their course so I’m not at all concerned.

I also did a little bit of number crunching over the last few days to see what was likely to happen about New Zealand. There are 19 months from today until the 1st of May 2024.

If I were to lose 5lbs a month every month between now and then I could be down another 95lbs putting me at 157.6lbs.

This should put me in a very good place for being healthier and more able to do the things that I want to do when I’m there.

Can I lose 5 lbs a month? My history over the last 2 years has said -not consistently- but I think we have finally gotten my meds to a point that if I pull my head in and do what I’m supposed to do, then hopefully I can.

That would mean that at the end of the year I should have lost 15lbs putting me at 237.6lbs. Being 239 or less is my next goal anyway – so I am wanting to be there or under by Jan 1st!

I have started walking at the mall at least a couple times a week and I’m hoping that between sharpening up on my eating and doing this walking I will be able to hit this goal.

Trim artichoke stem (and petal tips if needed). Cut off the top inch or so of the artichoke and rinse to remove any dirt between the petals.

This month felt similar to last. It was full of ups and downs and it was an oddly emotional month. For those who may not know, I have a pretty major anxiety disorder and there are times that I get what I call weepy weeks. 😭 Everything sets me off into tears – like to the point I don’t watch much TV because insurance ads make me cry, much less anything dramatic.

Definitely no current events or news – I am very careful to live in my fluffy, sparkly, blissful ignorance bubble – watching, absorbing, discussing the horrible state of things would send me into a spiral that would be very difficult to climb out of…

Well this month was a weepy month. Not as bad as some but it was pretty strong. And 95% of it was unjustified, irrational anxiety brain based. And I know that – but knowing it doesn’t change it happening. I’m not complaining and I have it as under control as I can but I’m just shedding a little light on the situation as a whole…

Now while I am not normally an emotional eater, I had more than a few high pain, high fatigue, emotionally over threshold days that went one of two ways.

I either didn’t eat much at all or I ate super simple, no cook, canned stuff like canned spaghetti, canned chili on a potato or canned chicken or tuna that didn’t require effort but also was much higher in carbs and sodium and no veggies in sight.

I try to make brunch my main meal that involves cooking and leave dinner to be something that requires less prep as I hurt more and have much less energy in the evenings. I don’t always get it right but I’m trying.

I’m still making my way though the freezer meals I made earlier in the year but they just aren’t as good as cooking fresh and I’m down to mostly soups which are okay… but I ate most of the ones I liked already…. 😂

I had my Dr appointment on May 2nd but my doc was sick so I saw another very nice Dr and we ran some labs and I rescheduled to see my normal Dr yesterday (May 31st).

The labs I had done on May 2nd were about 6 months from the previous ones. It was a mixed bag of good and okayish news…

▪️WBC = 13000 (elevated) – always is and stayed about the same

▪️Glucose = 92 – which is what I get normally testing at home

▪️Kidney function (EGFR + BUN + Creatinine) = normal

▪️Sodium / Potassium / Calcium = normal

▪️Hepatic Liver Function Panel = normal

▪️Thyroid Panel (incl T3 + T4) = normal

▪️Parathyroid Panel = normal

▪️Vit B12 = in range
▪️Vit D = 9 (30 is recommended minimum)

▪️Insulin = 63 ( was 245 – max recommended is 24 )
▪️C-Peptide = 9.6 ( was 28.8 – max recommended is 4.4 )

▪️Total Cholesterol = up slightly
▪️Triglycerides = down

I started a different trio of blood pressure medications and a new med for my muscle spasms. I had to drop one of the blood pressure meds because of the reactions but am tolerating the rest well.

Unfortunately my blood pressure is still a real problem. The new meds lowered it but after a few weeks it is creeping back up there… I saw my normal doc today and it was back to 180/119.

We talked about several things…she reordered some labs, wants a chest xray to look for early stage congestive heart disease, we are trying to get a heart cath procedure approved through my insurance, she is going to set me up another cardiology appointment and wants me to have both arm and leg nerve conduction testing done.

I asked her about the genetic testing service I found since I have so little information on my family and she thinks it could be very helpful and suggested I do it. It takes 16wks to get results back so I’ll get the kit ordered and I’ll know more around September.

Depending on the results of the labs we just did, I will either see her in a week or another month.

So this month I need to do a few things:
▪️ Continue 30-40% carbs to get insulin down more
▪️ New meds
▪️ Try for 15min / day exercise but I have to monitor my heart rate fluctuations

I’m also going to do another month of Zombie Apocalypse Pantry clean out – which just means doing very limited shopping besides produce top ups and using the proteins (freezer) / pantry stores I already have.

We’ll see how it all goes!

This month was a bit better. Still hard and we still had days where it went from 80 degrees to snow – which was just crazy.

I have a doctor’s appointment tomorrow (May 2nd) to run all of my labs and things again. It’s been about 6 months since I have seen her in person.

I got to the point last month that I thought I was going to have to go to the hospital for my blood pressure. I wasn’t able to get an appointment any sooner so I did some digging around and found some old blood pressure medication from a few years ago which I started taking just to see if I could get it to come down out of where it was.

It seems to be working some as I’m now down into more of the 160 / 170 systolic range.

One of the things that we need to discuss is the possibility that this is coming from heart disease. I don’t know much about my dad’s side of the family but I know that my biological mom had a pacemaker put in in her 40s and two of her sisters died of congestive heart failure in the last few years. So there’s a very real possibility that this is going to be an issue. We will see what my doc says.

My birthday is this week and I was hoping to go to Dollywood for the Flower & Food Festival that I missed last year but I just don’t think that I am feeling up to it. 😭😭😭

I am a little concerned that I may not be able to go to New Zealand next year if this turns out to be a heart issue or I just don’t feel better than I do now but I am going to keep it as a goal and hope that come this time next year things are radically different.

Another killer month. Wild weather swings from the 70s to snow storms back to the 70s and then more snow. This triggered several inflammation flares.

Then I have really been struggling with my blood pressure and subsequently my breathing. If you’ve watched any of my recent videos you can hear it… It’s been difficult.

I restarted 3 blood pressure meds that I was on before but had stopped because of the side effects. Part of this is also a reaction to them but I can’t continue with my BP this high.

All in all – March was a big wash…

The Kroger ad changes on Wed so I went to town to get some things on sale… Juice, toilet paper, a certain yogurt, potatoes… 🤣… you know, the usual. Well they were out of the juice, yogurt and the toilet paper so I’ll have to go back next week before it changes. I did get some other cool stuff though.

Tracy, my cousin, wasn’t feeling well so after shopping (and catching up with a friend I haven’t seen in ages) I had dinner out at Tampico …

🌵 MIXED FAJITA PLATE (TAMPICO RESTAURANT)
I had dinner at my favorite Mexi place (Steak, Chicken & Shrimp 🌯 Fajitas)

I should have remembered I never eat it all and when I pretracked I counted the entire meal… Welllllllll I only ate some of it – the rice, beans and the shrimp they don’t reheat well, and ended up with more than 500 calories left.

I have been very lucky eating here – as long as I don’t eat the salsa (Calcium Chloride), I have had no trouble here.

It’s like seafood from Peking House – there may be MSG in some things but I don’t react to that and have no reactions eating there.

NEW WEEK, NEW MONTH
I love when things line up like this… 🤣

Nothing much different this week. My inflammation is subsiding (after an +11.8lb poof last week). I have been pretty on point with calories and started taking the GOLO supplements regularly which I do think are at least helping settle things down. I am trying them for 60 days and will see what my labs look like in January.

Even with Thanksgiving and lunch at a Chinese Buffet, I managed no real flare ups and the weather is, for the most part, playing nice. It was a good week.

I am going to try something different weigh in wise for a bit. I am still weighing daily (tracking my inflammation) and it is shown on the bottom of my tracker for the day on my blog each night.

But in terms of like official weigh ins – I’m just going to record every 1st of the month. People get surprisingly upset/rude if they don’t know me or my situation and see a big gain or loss… I’ve just gotten tired of explaining and feeling bad about it so…

Working on keeping on, keeping on. If you have seen my videos this week, I have been feeling a little rough… Nothing out of the ordinary, just general me + meds/weather stuff. So I was pleasantly surprised by a loss this week! Rock on!

I am also trying a new supplement a friend suggested – it’s supposed to help with Insulin Resistance, high blood pressure and cholesterol etc… I am unfamiliar with it but I’m going to try it. It arrived today and I’m starting it in replacement of the 5 others I am currently taking to manage the same issues… We will see what happens in a month.

A few weeks ago, I weighed on Friday at 250.6 but by the time I had my Dr appointment on Monday I was 260.6 with an inflammatory flare and last weeks weigh in was 260.4 (so a +9.8lb gain).

We adjusted some meds based on my bloodwork results and I am back to taking some of the meds and supplements I had stopped for this exact reason… They cause major poofity poof poofs… So I knew it was coming.

There was a 30° temperature swing with some storms which always flares things up as well so I knew it would be a bit rough but it is starting to subside.

Last week was the final week of my 12 week reset. I have a few more things to test this week but overall it has given me some valuable insights that I think will be very helpful moving forward!

#fearlessfridays are back!
Between a very high stress Wed which caused a super pinata 🪅 poof and a pretty high reaction to a melon on Thursday, I was up quite a bit (+8lbs) so I expected a gain… I’m surprised it isn’t more – still not sure this is completely correct but we’re going to go with it for now and I’ll charge the scale again.

After the rains come this weekend (more ⛈️☔⛈️ poooooof) it is supposed to calm down for a bit. There is a 20° temperature swing coming and that’s going to kick me in the teeth but I love the cooler weather. This is my favorite time of year. 🍃🍂🍁🍂🍃

Exciting week ahead…

Food testing is still going well. This starts Week 10, so 2 more weeks left. I have several reintroductions to try this week including
🍍 Pineapple
🥝 Kiwifruit
🥬 Sauerkraut
🍚 Wild Rice

I have repeat bloodwork to do on Monday to see the actual numerics of how this is affecting things… I’m really interested to see. There are several oxalate specific serum tests that can be done but I’m not sure if they can be done through the lab we use or if insurance will approve them… We’ll see on Mon!

Then I’m going to do a pretty decent size shop at Kroger. I’m cleaning out the fridge and organizing the freezers and I’m working out my main meal ideas for the week with a shopping list…

Friends came to help assemble my new bed and we decided I did need to order a box spring so that arrives next week and then I will soon have a new bed (and bedroom)…

Plus my normal cooking for Sandy and stuff… Lots on for me but it is all good…

#fearlessfridays are back!
Weird week all around. It is:
* Whale 🐳 Week and I’m all weepy and anxiety ridden…
* Storms have been here for 3 days and I have felt really rough and been struggling a lot physically…
* Didn’t eat yesterday at all and only a little the day before which absolutely has contributed to this loss…

I hurt from head to toe… But I’m still here, still trying, still pushing through…

Health wise – the lower oxalates continue to be making huge improvements in my general wellbeing – storms kicking up the Fibromyalgia and Mast Cell reactions aside, I am doing better than I have in years.

Today starts Week 9 of 12 – no food changes really except to hopefully feel like playing with my food again soon.

#fearlessfridays are back!

Rough, rough week weather wise – big, beautiful storms 🌧️☔🌧️ came over – which I personally love but boy, my body does not!

I poofed up big time… My hands and feet swelled something fierce, my eyes swelled, my BP went up from all my muscles and organs swelling, my breathing is rough (pressure on my lungs from all the swelling)… It is all kinds of fun.

I knew I was going to be up – I was up about +13lbs the day before weigh in so I wasn’t surprised… It will start to go down now that the storms have gone…

Food wise, I had very little reactions this week – it was all pretty good. Although, there were several days that I just didn’t feel well and didn’t eat much… Part of the habit I am trying very hard to overcome.

New week – new Phase of my 12 Week Wellness Reset. This is the final Phase which covers Weeks 7-12…

Still testing and reintroducing foods and working on a finalized elimination list.

Nothing to change just week – just have to work through the inflammation…

I think for the first time in more than 5yrs, I am really onto something here. I have known about my food sensitivities for years but it looks like Oxalates were the missing piece.

I am just starting Week 4 of this 12 Week Wellness Reset and I feel better than I have in a long long time. My blood pressure is down, my breathing comes easier, my hands and feet don’t hurt as much and my last trip into town to run errands didn’t half kill me….

Given that this is the beginning of Whale 🐳 Week for me, we have had lots of rain and my body is still basically going – Huh? What? Which way? – I am thrilled with a loss.

It may take another 3 months for my weight to begin changing with any real predictability but if I continue to feel better – I don’t really care…

I am at the point in my reintroductions that it isn’t difficult to have what I want, it just takes more planning to research Histamine and Oxalate levels for everything, especially now that I am reintroducing multi ingredient products.

Although, I got surprised this week by Blackberries. Normally I pretrack and mark everything but for whatever reason I didn’t with them. I knew they were okay with my Histamine Intolerance but what I didn’t count on was how high in Oxalates they are. I ate a 6oz clam shell and it was a whopping 89mg of my recommended 100mg…
💥 KAPOW 💥 Lesson learned – this is why we pretrack.

The time and effort has been very worth it, and once I mark a food with the correct information for me, I don’t have to worry about it.

Each food is marked in several ways –

If you aren’t familiar with my situation, basically I live with several autoimmune issues… an “inflammatory overstimulation response” brought on by my basic blood cells thinking they are Spartan Warriors and attacking everything in sight.

[Mast Cell Activation Syndrome or MCAS is my main issue but also fun things like Fibromyalgia, POTS, Histamine Intolerance, Insulin Resistance and on and on… ]

My weight fluctuations are not water weight, not sodium retention and the gains do not go away until the cells calm down and the actual muscle inflammation decreases. When a flare happens, everything swells – my eyes, my hands/feet, my actual muscle tissue and organs … I can, and do, put on up to 20lbs in a bad flare and this can take 3-4 weeks to lose again.

I had a huge inflammation gain last week and started a 12 week plan to better identify and eliminate those reaction triggers.

I think for the first time in more than 5yrs, I may be on to something. Usually when I have an inflammatory gain, it takes 2-3 weeks to lose it. If it is a huge gain like last week (+21lbs) that often takes 4-6 weeks to lose it.

For the past six months I have been steadily gaining with one flare after another. It absolutely has been a combination of the weather and food reactivities.

I have known for a while about my Histamine Intolerance but what I didn’t know until this week is what kind of role Oxalates play in this. Oxalates are found naturally in many plants and it turns out that a lot of the things that I was eating (that are super healthy for you) are also extremely high in Oxalates and having an excess of oxalates can cause inflammation issues in people who are sensitive to it. I am finding more and more evidence that this is likely the case for me.

Normal recommended oxalate level are 200-500mg/day.

For someone who should be monitoring their oxalate levels, you want no more than 100mg in all of your foods combined in a day.

People who have trouble with kidney stones and are high risk – free recommendation is 20-50mg / day.

Spinach alone, which I eat very often, has 650mg of oxalate per cup. Other dark leafy greens like Chard and Beet Greens are 500-700mg per cup. Then things like Black Beans are 72mg per 1/2 cup… Things like potatoes and sweet potatoes which I was eating at least every other day are high in oxalates per ounce. Whole wheat and whole grain foods can be 3-10x as many oxalates as a standard white version of the same thing. And I always eat whole grain…. So if I had all of that in one day – I was literally crippling a body system that was already struggling but I thought I was eating healthy.

I’m learning a tremendous amount as I go and I’m hoping that at the end of this 12 weeks, I will have my customized food plan with all of the correct reactionary levels for myself personally.

I would love to see a general decrease in my weight as I go but the biggest thing for me right now is just to heal this past 6 months worth of Mass Cell destruction and get a better understanding of what I need to do specifically for me.

Having a medical condition of any type is never easy but taking the time out during your journey to actually work out what works specifically for you is so important. Heaven knows there is a ton of conflicting information available in books and on the web. You have to work out what is specific to you.

There are foods that I react to that other people have no problem with and then there are foods that are marked generally higher in reaction properties and people have said “oh you shouldn’t be eating that” but for me, I don’t have a reaction to.

There is a tremendous amount of information out there but until you break it down and test it for yourself, you’re only guessing what has worked for somebody else. This is going to be a wild 12-week ride with great learning potential, but it’s off to a fantastic start.
