🥯 HOMEMADE EVERYTHING BAGEL SEASONING You can adjust as you like to suit your tastes. If you want a sodium free version, leave out the salt. I buy the ingredients from my international market or bulk bins and can make 2 huge containers for far less than one bottle of Trader Joe’s or similar. ▪️ Black Sesame Seeds ▪️ White Sesame Seeds ▪️ Poppyseed ▪️ Minced Dried Garlic ▪️ Minced Dried Onion ▪️ Kosher, Pink Himalayan or Coarse Sea Salt
🔘 Eggs beautifully poached in ExcelSteel 2 Egg Poaching Pot Bring water to simmer (not rolling boil) Spray egg cups with cooking spray or oil Crack 1 egg per cup – duck eggs / jumbos just fit Cook over MED heat for 4min Remove immediately (pan, cups and lid will be hot 🔥)

🥚 PERFECT SOFT BOILED EGGS In small saucepan, bring enough water to completely cover the eggs to a rolling boil. Reduce temperature to med and when the water is at a low simmer, gently add eggs. Avoid dropping them in the pot as they may crack.
Cook chicken eggs for 5 min (or duck eggs for 6 min) uncovered. I like to stir them every few minutes to prevent the yolk cooking more on one side.
If you prefer hard boiled (but not chalky super done yolks), increase time to 9min for chicken eggs and 11min for duck eggs.
Once cooked, drain out the boiling water and fill the pot with cold water. I personally don’t do an ice bath because I don’t want my eggs cold to eat.
Crack the eggs gently all the way around and put in the pot of cold water to allow water to get under the membrane. Leave eggs for 3-5 min, peel gently under running water and enjoy.

Today was very productive. I didn’t need to go anywhere or do anything specific so I had a chance to reorganize some things like my craft room and my produce bins and eat at home all day which is always good.

🎨 MINIATURE PAINTING I worked on base coloring some figures for a privately commissioned paint job! Exciting! He is buying a set I started painting and had asked me to finish the rest of the set.
I started it 2yrs ago and tonight I started getting the base colors down on the unfinished models. I was very happy to be able to get so close to the original colors used given that they were a custom mix back then and I was using different Paints now. [Details in video]

🍲 BEEF BIRRIA DE RES 🆕 NEW RECIPE 🆕 #experimentsineating I have been wanting to try my hand at making this for awhile and finally got all my ducks in a row to do it. There are tons of different recipes depending on how you want to cook it and what region the recipe is from. I used a combination of these. I am not making the tacos – I just wanted it as a stew.
Techniques vary widely as well. Some recipes say to toast the chilis and aromatics, some boil or presoak the chilis, some sear the meat first, some use stock, some use water and powdered bouillon, some put everything in the pot together, some make the sauce first… There are a lot of variations!
As I have never done this recipe before – look at the traditional recipes above and decide for yourself what you want to do.
RECOMMENDED TIPS I SAW & USED * Take your meat out at least an hour before cooking, season it and allow it to come to room temperature. * If you are sensitive to chilis or their seeds, be sure and wear gloves when deseeding. * Depending on your blender, you may need to strain the chili sauce to remove the small pieces of skin left over from the chilies. * if you are blending the liquid hot, be sure to either use a blender that has an opening at the top to allow pressure and steam to escape or if like me you don’t have one of those you will need to let the liquid cool before blending. Because I don’t have a super powerful blender – I decided to cook everything together and blend afterwards.

💮 QUICK PICKLED RED ONIONS In the first recipe, I was reminded of pickled onions which I normally keep on hand but didn’t have so I started by doing a quick pickled red onion which I knew would be ready by lunch time. Here are a few recipes to try if you aren’t familiar with making them.

1c water in inner pot + trivet Puncture squash all around High Pressure + Natural Release (I like it to still be firm so I use the lesser times) >1lb = 4-5min 1lb = 8-10min 2lb = 15-20min 3lb = 22-25min 4lb = 28-32min
It will be 🔥 SUPER HOT 🔥 when it comes out… Use a towel or mitts and cut open to cool. Once cool enough to handle, scoop out the seeds with a spoon and enjoy.
* Delicata, Honeynut, Red Kuri and Sweet Dumpling Squash can be enjoyed skin on.
* Small / young Butternut or Kabocha Squash skin can be eaten but may be tougher.
* Large Squash especially including thick skin varieties like Acorn and Spaghetti Squash are not intended to eat the skins.
